I Love Brunch

So lately I’ve been digging pancakes for lunch. But of course, there is only one of me and I’m trying to not gain a thousand pounds so I came up with a nice little recipe for some single-serving, healthy, gluten-free pancakes.

1/3 cup of brown rice flower (or any other gluten free flower or normal flower if you don’t want them gluten free)

1/4 tsp baking soda

1/2 tsp baking powder

A good sprinkling of cinnamon if you’re in the mood for it

Pinch of salt

1 egg

1/4 cup of almond milk

1 tbsp of vanilla yogurt

1 tsp coconut oil

1/2 tsp vanilla

Sometimes I throw in some apple bits if I’m feeling sassy

Mix up the dry ingredients first, then add the wet ingredients. Put the pan on medium heat and use some coconut oil to grease the pan. Put the batter on the pan and wait until it bubble, then flip. Should make about three smallish pancakes or two large ones. Yum yum yum. Happy brunching!
